Maple Apple Pie
Fall is apple-picking time! Try this pie with a hint of maple syrup for a taste of autumn.
Ingredients
- Two thawed frozen 9-inch pie shells, one for the bottom crust and one for the top crust
- 7-8 large green apples, peeled, cored, and diced to make approximately 5 cups (to give the pie height)
- 1/2 c. maple syrup
- 1 T. molasses
- 1 T. brown sugar
- 1 t. ground cinnamon
- 1/2 t. ground nutmeg
- 1/2 t. ground ginger
- 1/2 t. lemon zest
- 1/4 c. all-purpose or whole wheat flour
- 1 T. water or apple juice
Directions
- Preheat oven to 400 degrees. Place one pie shell in a 9-inch pie pan and crimp or fold edges. Bake for 3 minutes. Allow shell to cool.
- Place apples in a large bowl. Mix in the remaining ingredients (except for the other pie shell) and toss to combine. Fill the baked pie shell and cover with the top crust. Place on a baking sheet and center in the middle of an oven rack. Allow to bake for approximately 40 minutes or until filling is bubbly and crust is just golden.

Cranberry Nut Snack Mix
Ingredients
- 2 c. raw sunflower seeds
- 1 c. pine nuts
- 1 c. raw pumpkin seeds
- 1 c. dried and sweetened cranberries
- 1 c. raisins
Directions
Measure all the ingredients into a mixing bowl and stir with a wooden spoon until well combined. Transfer some to a festive bowl to serve as an appetizer or take on the trail when hiking.
Yield: 6 cups
Energy Bark
Ingredients
- 2 c. old-fashioned oats
- 1/2 c. sliced almonds
- 1 c. shredded coconut
- 2 T. whole wheat flour
- 1/4 2 t. cinnamon
- 1/2 c light brown sugar
- 5 T. butter or olive oil
- 4 T. honey
Directions
- Preheat oven to 325 degrees.
- Mix the oats, coconut, and cinnamon together.
- In a small saucepan, melt butter, honey, & brown sugar.
- Bring to a small bubble boil then remove from heat.
- Pour over the oats and mix well.
- Bake for 20 minutes.
- Half way though, add the almonds by quickly stirring them in.
- Cook for 10 minutes longer or until golden brown.
- Yields 20 servings. Mix first 6 ingredients together in a small bowl.
- Bring brown sugar, butter or olive oil, and honey to a boil in small saucepan: cook 30 seconds.
- Pour brown sugar sauce over oat mixture and stir.
- Spread on foil-lined baking sheet.
- Bake 20 minutes.
- Let cook then break into pieces.
Yield: 12 bars
